Venture into the vegan world on your time off

Having excess time is nothing new right now; if you’ve exhausted your baking and cooking options, I encourage you to venture out into the plant-based world and try something new. These vegan cauliflower nuggets are the perfect option. 

What you’ll need:

  1. 1 head of cauliflower
  2. ¾ cup of flour
  3. 2 tsp garlic powder
  4. 1 tsp paprika
  5. 1 tsp salt
  6. ½ tsp pepper 
  7. 1 cup dairy-free milk
  8. ½ cup of buffalo sauce

Directions:

  1. Preheat oven to 450℉
  2. Cut the cauliflower up into bite-size pieces as shown.
  3. Combine flour, garlic powder, paprika, salt, and pepper into a large bowl
  4. Add your choice of dairy-free milk to the bowl of dry ingredients, I used Silk unsweetened almond milk.
  5. Dip the cauliflower pieces in the batter mixture and arrange them on a cookie sheet coated with non-stick spray.
  6. Bake for 20 minutes
  7. Remove from the oven, allow the “nuggets” to cool for 10 minutes, then dip each one in the buffalo sauce, bake for an additional 20 minutes.
  8. Enjoy!
