“Bon Appetit!” from La Brigade
La Brigade is back with their second luncheon of the year that took place on Sept. 29 2017.
The restaurant served a delicious Italian menu planned by seniors Adriana Bonilla and Mia Borkovec.
“Our menu included tomato bruschetta, chicken piccata with confetti rice pilaf, garlic green beans, and a cannoli cake for dessert,” said Borkovec.
This year La Brigade welcomed back advanced students who have already taken the class and a number of new students. This includes sophomores, juniors, and seniors who have previously taken a variety of culinary classes.
“The new staff is great, and they always come in full of energy,” said advanced student, Ally Geary. “They have caught on very fast, and I’m excited by what the other luncheons will bring.”
During the week prior to the luncheon, many students choose to come in during their off periods to help with preparation.
“It’s really great having students here who are motivated to put in extra time at the restaurant during their off periods,” said Mrs. Wendy Albert, who serves as the chair of the career tech ed division, and teaches food and restaurant managment.
Students who worked the luncheon said that, after a long week of prep, they were reassured by the positive feedback they received from guests at the end of each lunch period.
“Getting compliments at the end of the luncheon makes all those prep days worth it,” said Bonilla after the luncheon on Friday.
As a whole, the staff was very pleased with the outcome of the luncheon. However, since it was the first luncheon of the year completely planned by the students, there are some things they will be working on for next time.
“As a whole we need to work on communication to make things go smoother during the luncheon,” said senior and advanced student Kevin Homan.
